2.  In 1940 when the Watson Bagel operation began, the bagel-maker's union was a tiny closed union, open only to sons of union members.   They kept it that way by restricting membership only to those who had an intimate knowledge of bagel-making, and the only ones who knew bagel-making were the sons of union members who had learned from their union-member fathers.  The union local in the North Jersey area was NO. 338, a small local.  Eventually, it was absorbed by New York Local No. 3.
